Ginisang Monggo Recipe


 


For unknown reasons, the Philippines cook this dish on Fridays. However, this practice should not stop us from cooking this recipe at any time of the day and on any day of the week. Ginisang Monggo is easy to prepare, healthy, delicious, and budget-friendly Filipino dish. It is Ginisang Monggo or Sauted Mung beans with pork meat and green leaves. Others may use fried fish or dried shrimp instead of pork meat, but either way, this dish will amaze you with its delicious taste, it's one of the comfort food in town. 

Aside from pork meat, this dish is normally served with green leaves such as Malunggay leaves, Spinach, Alugbati, Himbaba-o, or Ampalaya leaves. Also, others may put crispy pork Chicharon for an additional texture to the dish. 

For this recipe, I used pork meat and Himbaba-o or also called Alukon in the Ilocano dialect. You may use any of the ingredients mentioned above. 

Ingredients:

  • Himbaba-o or Alukon
  • 1/4 kilo Pork Belly
  • 5 cloves Garlic
  • Pinch of Salt and Pepper
  • 1/2 tsp seasoning granules (optional)
  • 1 cup Mung beans
  • 1/4 cup bagoong
  • 1/2 tsp vetsin (msg)
  • 1 medium onion
  • 3 small tomatoes

Himbaba-o or Alukon or Birch Flower


Instructions: 

  1. Prepare the Himbaba-o or Alukon. Set aside
  2. Pan-fry the pork belly until it turns brown and goes to a crispy-like texture. Add 2 cloves of garlic, seasoning granules, salt, and pepper to taste. Set aside. If there is oil, remove it. 
  3. In a cooking pot, add the Mung beans with enough water to cover all the beans
  4. Allow it to boil until the beans are soft. Add more water if needed
  5. Once soft, add bagoong and vetsin.  Mix, and continue to boil
  6. In another pan, saute garlic, onion, tomato, and the fried pork meat
  7. Add the sautéd meat to the boiling mung beans. Mix and allow it to boil.
  8. Taste and adjust
  9. Add the Himbaba-o, let it cook, and serve hot
