Dinengdeng or also called Inabraw is a very popular dish in Northern Philippines or the Ilocos Region. This is a vegetable dish with bagoong soup and with different kinds of fresh vegetables.
Dinengdeng is a dish wherein you can cook your favorite vegetables as long as you follow the procedure for cooking this dish. For this recipe, I mainly used buto ng sitaw or beans seed mixed with other vegetables that I like to eat. Take out some if you do not like it.
Ingredients:
- Buto ng sitaw
- Talong
- Ampalaya
- Malunggay
- Talbos ng sitaw
- Bulaklak ng kalabasa
- Sigarilyas
- Dried shrimp
- Bagoong
- Vetsin
- Kamatis
- Sibuyas
- Water
Instructions:
- Boil the beans until soft
- While boiling, prepare all the vegetables. Wash and put in a different bowl for each vegetable
- When the beans are almost soft, add bagoong. Note: add more water and continue boiling until it is soft (according to your liking)
- Add sliced onion and tomatoes, continue boiling until the tomatoes are well cooked
- Then, add vetsin and dried alamang, boil for 5 minutes
- Taste and adjust
- Next, add sigarilyas and simmer for 30 seconds
- Then, add sliced ampalaya, talbos ng sitaw, sliced eggplant, and simmer for 1-2 minutes. Don't forget to mix from time to time for even cooking
- Add bulaklak ng kalabasa, cook for 30 seconds
- Then, add the malunggay leaves and boil for 1 minute
- Serve hot and enjoy
Note: You can add fried fish in addition to the dried shrimp. This will give additional flavor to the dish.
