How to cook Dinengdeng Ilocano dish


Dinengdeng is one of my favorites. Not only it is healthy and affordable, but it is the dish I ate while growing up in the mountain part of the Ilocos region, Philippines. Dinengdeng also called 'inabraw' is a vegetable dish composed of different vegetables. 

There are similar dishes within the country, but what makes Ilocano Dinengdeng different is we used 'bagoong isda'. The vegetables used in this dish are the ones that are normally grown in the backyard, they are fresh and organic. Although, you can also buy your veggies in Supermarkets or public markets, and will also taste awesome. If you are not a fan of pure vegetables, level up the dish. You can add shrimp, fried or grilled fish such as tilapia or bangus (milkfish). The flavor will incorporate into the soup, which will make it more delicious. 

Ingredients:

  • Water
  • Bagoong isda
  • Vetsin
  • String beans or sitaw
  • Papaya (green, not ripe)
  • Saluyot leaves
  • Shrimp

Instructions:

  1. Boil water for the soup
  2. Add the bagooong isda. Boil to cook the bagoong for about 3 minutes
  3. Add vetsin. Boil for another 2 minutes. You can take this out if you do not like to use vetsin
  4. Add string beans. Cook 1 minute
  5. Add papaya. Cook for 2 minutes
  6. Add saluyot leaves. Cook for 3 minutes
  7. Add the shrimp and cook for another 2-3 minutes

Serve hot with rice and enjoy!

Tips: 

Water depends on how plenty your veggies are. It should level your veggies once cooked.

Bagoong depends on how salty you want the soup to be.

You can add shrimp or alamang, fried fish, or grilled fish. Their flavor will add more taste to the soup.
