No-Bake Carrot Cake Recipe with Cream Cheese Frosting

 


A Carrot cake is a cake that contains freshly grated carrots mixed into the batter. This is one of my favorite cake recipes, it is easy to make and amazingly delicious. I like it served with hot coffee, but this is also perfect as a birthday cake. I make this cake from time to time whenever I crave it and couldn't wait until Easter Sunday wherein carrot cake is normally the number one choice of dessert. 

This is an easy and delicious recipe for homemade carrot cake.  This cake is perfectly moist with homemade cream cheese frosting topped with crushed peanuts.

Ingredients:

Cake

  • All-purpose flour 1 ½ cup
  • Baking soda ½ tsp
  • Baking powder 1 tsp
  • Cinnamon powder ¼ tsp
  • Salt ¾ tsp
  • Oil ¾ cup
  • Brown sugar ½ cup
  • White sugar ½ cup
  • Egg sarge 1
  • Vanilla extract 1 tsp
  • White vinegar 1 tsp
  • Grated carrots 1 ½ cup

Frosting

  • 112g cream cheese
  • 50g butter
  • 300ml condensed milk  
  • 1 tbsp vanilla 
  • 1 tsp lemon zest or orange zest

Instructions:

1. In a mixing bowl, combine the dry ingredients, and then mix well

  • 1 ½ cup all-purpose flour
  • ¾ tsp salt
  • ¼ tsp cinnamon powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda

2. In another mixing bowl, combine the wet ingredients
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 3/4 cup cooking oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • mix using a mixer until the powder is  dissolved

3. Add in the dry ingredients from Step 1
4. Mix again until well incorporated
5. Add 1 1/2 cup grated carrots, and then mix
6. Pour the batter into the baking pan with parchment paper at the bottom
7. Tap to release air bubbles, and then put in a steamer. Don't forget to wrap the lid of the steamer with a clean cloth to avoid dripping water into the cake 
8. Steam for 30 minutes or until cooked
9. Once cooked, let it cool down before slicing

Frosting
1. In a bowl, put 112g cream cheese and 50g butter and then beat for 2 minutes
2. Add 300ml condensed milk, and continue mixing
3. Add 1 tsp lemon zest and 1 tsp vanilla essence, mix

Assemble:
1. Wrap the baking pan with cling wrap
2. Add 1 slice of the cake, and then add frosting
3. Add another cake layer, and then add frosting
4. Put in freezer until hard
5. Once hard, unmold and frost the sides
6. Design with crushed peanuts 
7. Design your cake as you wish and happy eating!
